Whoopie Pie (Red velvet edition)

I often wonder if they actually went "WHOOOPIE" when they first made this treat. Because boy oh boy it's delicious! The thing I like most about these 'pies' is that we can change the filling into anything we like. I personally prefer marshmallow fluff with a dollop of ganache in the middle. But any sweet filing will work wonderfully with it.


This recipe makes 10 shells, meaning there will be 5 pies once you sandwich them. But by all means, double or triple the recipe to your requirements. What you'll need: Melted margarine 50g

Brown sugar 40 -50g

Egg yolk 01

Vanilla 1/4tsp

Flour 50g

Cocoa powder 1 tbsp

Salt - a pinch

Baking powder 1/8 tsp

Baking soda a pinch ( for double the recipe use 1/8 tsp)

Red food coloring


You can use the egg white to make some meringue fluff and use as the filling.

All you need is to weigh the egg white and use the exact same amount of fine sugar


For example, if the weight of egg white is 30g, use 30g of sugar with a dash of vanilla and a pinch of salt

Whip the egg white until foamy and add in the sugar a bit at a time and whisk until you get a glossy meringue


As for the whoopie cakes the method is as the following:

  1. Place the melted margarine, egg yolk, vanilla, and sugar into a bowl and whisk.

  2. Add the food coloring to your desired strength (a few drops will suffice)

  3. Fold in the dry ingredients and place the batter into a piping bag

  4. Pipe onto your prepared baking tray leaving about an inch of space in between

  5. Bake at 180 for 10 - 12 mins and let it cool in the tray itself for 2 mins before removing them.

  6. Cool completely before adding the filling. ENJOY!
