A rich velvety smooth pastry cream within a crisp choux shell is the ultimate dessert. It's light and chocolatey with a great mouthfeel. Not overly sweet so you can definitely go for a second or third serving.
I was never a big fan of store bought eclairs and puffs since they were almost always filled with a sugary American buttercream. Up until I made my first custard éclair that blew my little brain off I was one of those people who swore off eclairs or any choux dessert. Now it's one of my favorites since it's rich yet light, like a little chocolate cloud.
