A delicate flaky puff pastry base filled with decadent pastry cream, covered in profiteroles and topped off with a light and fluffy chiboust crème; this elegant French dessert catches everyone's attention! The Gateau St. Honore is a show-stopping Choux pastry gateau named after the patron saint of pastry chefs and is a classic French Patisserie worth the effort that goes into making it.
Although this is probably not something you should be indulging in on the regular, this spectacular dessert is so beautiful and is the perfect centerpiece for any feast. It is certain to impress your guests and have them reaching for another slice right after the very first bite!
In this particular recipe, I used smooth and silky Italian meringue over a chiboust creme as it holds better in a tropical environment. As this dessert contains different components, the recipe is quite long. But bare with me, it will all be worth it in the end. So, without further ado, lets get baking!
