Coffee Bun

The coffee bun which goes by many names such as Rotiboy, Paparoti, Coffee butter bun or even Mexican coffee bun is a soft fluffy bun with a buttery sweet center topped off with a crisp coffee crust. Originated in Singapore as the "Kopi Roti' has nothing to do with Mexico or Indian roti. "Kopi tiams" meaning 'coffee shops' started to cater to clients who absolutely loved coffee infused products, hence the coffee bun was created. Not really sure how the name 'Mexican' got involved as it progressed. I had no idea about all this when I first tried this out but wow! Loved everything about it. So here's my homemade version of the famous coffee bun.
