Crème Caramel, or commonly known as caramel pudding is a velvety, rich pudding that's covered in luscious caramel. It's absolutely divine! For as long as I can remember I detested caramel pudding mainly throughout my childhood, because it was eggy and had a spongy off putting texture to it. Until I tasted my aunts pudding recipe which she basically forced me to try, my mind was set to look the other way whenever anyone asked me to try it. And wow, it was a long journey but I finally had the experience which made me love crème caramel. Unfortunately, she never shared her recipe with me. But now, I'd love to share my version of this delicious dessert that is more stable and just as creamy and rich as I remembered it to be. I hope you come to fall in love with it just as I did many years ago. Let's get baking!

Can I replace heavy cream with fresh milk?
No, but you could try using Greek yoghurt, if you absolutely cannot get a hold of heavy cream. Use 200g of Greek yoghurt with 350g milk. But I must say, the texture the heavy cream gives is irreplaceable with any substitute!
What can I do if I don't have custard powder?
You can add 2 extra egg yolks in it's place. I don't like to waste ingredients so I prefer to use the custard powder, it gives more stability to the filling as well.
