Feeling fancy? Gougeres, (aka cheese puffs) are a great tea time snack and will definitely be a fantastic addition to your next high tea. These beauties in all of their cheesy glory are basically savory profiteroles. It's a simple and delicious treat for everyone!

The same principles that go into making Pâte à choux are applied. Gougeres can even be served as an appetizer, as finger food or as simply a cheesy treat for whenever. Trust me, you will not be able to stop with trying just one and will always be reaching for more. This is one recipe you simply must try!

What kind of cheese can be used?
Any kind of grating cheese can be used in the recipe. It's purely up to your taste and preference.
Any recommendations for a filling?
A simple cream cheese, onion and sour cream filling will go splendidly well with these gougeres. My favorite however, is a tuna filling.
Can these be frozen and used later?
Yes, you can freeze them without a filling. Thaw them out slightly, pop it back in the oven and bake until they are firm. Cool and use as desired.
What other changes can be made?
I have added dried basil into the batter itself. You can incorporate a gentle sprinkling of mixed herbs or any kind of cheese to your preference.
