Anything red velvet perfectly embodies the spirit of Valentines Day. Therefore, keeping in theme with this week's Valentine's Day recipes, I present to you - mini red velvet cakes! They are accompanied by a luscious cream cheese frosting that is guaranteed to have your loved ones reaching for more.

This is my classic red velvet cake recipe and in case mini-cakes are not your style, you can just bake it off in a regular sized round cake pan to bake yourself a regular sized red velvet cake. Personally, I prefer mini-cakes, because who can fit a whole cake in their mouth?!
In addition looking absolutely adorable, these mini red velvet cakes taste amazing and are the perfect Valentine's Day treat for your special someone. So without further ado, lets get baking!

What are the substitutes for buttermilk?
You can use full cream milk with some lemon juice added to it. For one cup of milk use two tablespoons of lemon juice and let it sit for 10 minutes before using.
What type of food coloring should be used?
A gel or food paste would be ideal, as it would take only a small amount to get the desired color with minimal alteration to the batter's consistency. However, this does not mean you cannot use water or oil based colors. Any type of food coloring would work for this recipe.
Is there a substitute for butter?
Yes. Vegetable oil is a perfectly acceptable substitute for butter. When you use vegetable oil, the batter will be a little runnier but the final baked outcome will be unchanged.
