Sharlotka, Russian Apple Cake

Soft and airy, with the perfect amount of tartness from the apples; this apple sharlotka is an absolutely delicious addition to your afternoon tea. It is basically a light sponge cake filled with small apple pieces and can be made with very inexpensive ingredients which you always have on hand. This recipe is so quick and easy to make and takes little to no effort into putting together, it is a gem for unexpected company! It also tastes great the next day so you could make it ahead of time if you need to.


Despite being so wonderfully uncomplicated, Sharlotka is delicious and versatile. You can serve it as a cake or even indulge in a warm Sharlotka topped with a dollop of vanilla ice cream for dessert.


Oh, did I mention that it's absolutely fat-free? That's right, you do not need to use any butter or oils to make this sponge! I too was skeptical, much like you are right now; how is this cake soft and moist without any butter? But surprise surprise, it totally works!


Even though it is popular in Russia and is called a ''Russian apple cake'', legend has it that Russian Sharlotka was invented in London in the 19th century by French chef Marie-Antoine Careme. Over the years, the recipe for the modern day Sharlotka was very much simplified and perfected and this is my version of this beloved recipe.

Why do we not cook the apples?

Fresh and raw apples are crucial! IF you are tempted to cook them, please don't, trust the process! The excess moisture will ruin the final product.


Is there a specific type of apple that needs to be used?

No, you can use any kind of apple for this recipe.


Can we add butter to this recipe?

Yes, but only a very small quantity like 10g and it needs to be melted. If not the texture of the cake will be affected.


Are there any other fruits that we can substitute in?

Yes, you can use:

  • Peaches

  • Strawberry

  • Blackberry

  • Blueberry

  • Pear

  • Feijoa

But they should be fresh, not frozen.
