Soft and chewy on the inside with a crunchy, salty exterior; a soft pretzel is the perfect on-the- go snack or even a quick breakfast for most people. The humble pretzel originated in Germany and was once commonly distributed to the poor as a way of providing them with both spiritual and literal sustenance. However, now, it is enjoyed equally by people worldwide.

Warm, buttery and delicious these homemade pretzels are guaranteed to be better than the store bought ones. It can be enjoyed by itself or accompanied by your favorite pretzel dip. You will find yourself coming back for seconds and thirds every time you make them!

Why is baking soda necessary for the water bath?

The simple answer is that it aids in the caramelization of the crust as it bakes. When you add baking soda to the water bath, the pH of the water turns more alkaline which helps give the pretzel it's unique flavor and texture.

Can the proofing time be changed?

Yes, you can reduce the proof time to 15 minutes and still get soft pretzels. It's just that the extra 15 minutes gives it a better oven spring, which makes the pretzel soft and fluffier on the inside. You could even let it proof for a total of one hour, if you have that kind of patience.
